How Processing Impacts Flavor

Flip over a bag of any of our coffees, and you’ll see details that make each one unique—origin, variety, and processing. Each of these, along with roast profile, plays a key role in shaping flavor. Starting with processing, let's explore how each factor contributes to taste.

Processing refers to the method used to remove the coffee cherry from the seed after harvest. It’s a crucial step, with a major impact on flavor—affecting everything from acidity and sweetness to body and aroma. Whether you enjoy crisp citrus notes or deeper, fruit-driven cups, understanding processing can help you discover what you love.

Flavor Starts at the Farm

There are three main processing methods, each with a distinct influence on flavor:

  • Washed (Wet) Process – Clean and crisp. The fruit is removed before drying, emphasizing clarity and brightness. Expect citrus, florals, and a lighter body.

  • Natural (Dry) Process – Rich and expressive. The whole cherry dries intact, boosting sweetness and depth, often with vibrant fruit and a wine-like character.

  • Honey Process – The best of both worlds. Some fruit remains during drying, leading to a syrupy texture and balanced sweetness.

Tasting Processing Side by Side

Distinguishing processing methods can be challenging. A great way to learn is to taste coffees with different processing methods side-by-side. The examples below, though from various regions and farmers, highlights each method's uniqueness. 

What's in Our Blends?

Most of our blends feature washed coffees, which contribute to their clean, balanced flavor. One exception is Geometric, which includes both washed and natural coffees—giving it a unique, layered profile. Here’s a quick breakdown:

  • Fabricator – Washed Brazil + Colombia. Smooth, chocolate-forward, and easy to love.

  • Geometric – Washed Guatemala, washed Colombia, and natural Ethiopia. Fruity, structured, and complex.

  • Tiger Stripe – Washed Guatemala + Nicaragua. Rich and toasty with balanced sweetness.

  • Blossom – Washed Nicaragua + Brazil. Soft, floral, and cocoa-toned.
