Processing refers to the method used to remove the coffee cherry from the seed after harvest. Flavor Starts at the Farm
There are three main processing methods, each with a distinct influence on flavor:

Washed (Wet) Process – Clean and crisp. The fruit is removed before drying, emphasizing clarity and brightness. Expect citrus, florals, and a lighter body.
