Winner of a 2023 Golden Bean medal, this classic espresso blend is named after the beautiful range of colors, from mahogany to orange, found in a perfect espresso shot. It is sweet & full-bodied with notes of chocolate, almond, and fruit—perfect on its own, or with steamed milk. A versatile espresso, you'll find that it is easy to dial-in as well as consistently tasty across a range of brewing recipes. 

This particular blend is created from directly sourced coffee from our friends at Truth Trading Company in Guatemala as well as Gold Mountain Coffee Farms in Nicaragua.

About Our Sourcing 

Our blends are created from community-blended micro-lots sourced through our farming partners. Roughly 70% of all specialty coffee farmers lack the resources to form direct trade partnerships. However, by pooling their harvests and teaming up with our sourcing partners, they are able to create blended coffees which hold their own in the  specialty market. And by working together, each farmer assumes less risk while learning to develop a high-end coffee farm; a critical step toward self sufficiency and profitability.

Our Espresso Recipe

Use an 18g dose

Grind directly into your portafilter. Use your finger or a distribution tool to spread the grounds evenly before you tamp. Keeping your grounds as even as possible will lead to the best tasting shot.

Aim for a 40g – 45g yield

Yield can have a large impact on taste. Aiming for a larger yield can help your espresso taste balanced and complex. If you feel that your shot is lacking in flavor, try aiming for a larger yield.

35 sec - 40 sec shot time

A shot that runs too quickly can be thin and sour. Shots that run too slowly can be heavy and bitter. The best way to adjust your target shot time is by making your grind size more coarse, or more fine. A fine grind will create a longer shot time, a coarse grind will run faster.

Brewing Tips

Use Filtered Water

Contaminants and chemicals in your water can make your coffee taste muddy, and they can also be harsh on your equipment. Using filtered (but not distilled) water helps your coffee taste clean, bright, and naturally sweet. And while there are a lot of expensive water filters on the market, we find that an inexpensive, basic carbon filter does a great job filtering water for coffee brewing. 

Grind Fresh

We all love the smell of freshly ground coffee but all that beautiful aroma should be going into your cup and not just into the air. That is why we recommend grinding your coffee immediately before brewing so that all that goodness isn’t lost. The sooner you use your coffee after grinding, the more flavorful your cup will be preventing it from tasting stale and flat. And for best grinding results, we highly recommend using a quality burr grinder.

Coffee to Water Ratio

The amount of coffee beans you use can have a big impact on taste. Too much coffee, and the cup can taste heavy and sour. Too little coffee, and the cup can taste thin and bitter. We recommend using a 1:16 ratio by weight, 60g of coffee for every 1,000g of water which is about 2 Tbsp of coffee for every 8oz of water. Our preference is to use a scale to weigh coffee and water for accuracy and consistency, all of which can make a big difference.
