This red Catuai is grown at an extremely high elevation, and naturally processed by Diamond Mountain with the utmost care. They allow their naturals to sun dry on the patio for 3-5 days, and then use a Gardiola dryer to carefully air dry the beans for another 72 hours. This prevents any unpleasant characteristics from entering the cup, while making sure the beans age well. Slow drying processes like this have been shown to significantly increase the cup quality of the bean, and our experience with this bean is absolutely in line with that finding.
When brewed, this Catuai is clean, sweet, and bright. It has a wonderful balance of chocolate and nuts, with a citric undertone that adds lightness to an otherwise candy-sweet brew.
