Imagine you’re a tree, competing for sunshine with all of the other trees in your little neighborhood. If you’re the same height, you all get a pretty equal share most of the time. If you’re a lucky tree that happens to have mutated into being slightly taller than your neighbors, then—BAM! You get more sun. If you’re a lot taller, then you get a lot more sun.
Imagine you’re a tree that grows an abundance of cherries. All of the sugars you make have to be divided between all these little fruits, to feed all the little seeds inside on their journey to grow their own trees. What if you made less cherries? Well…they could be bigger. They could each get more nutrients and attention.
This is just the beginning of a long list of ways Gesha (Or Geisha, if it’s from Hacienda la Esmeralda) coffee is different than other coffees. The trees are taller, they produce less coffee, and they grow best at a much higher altitude which means instead of taking 3 to 5 years to produce coffee, it takes them 8. They’re very finicky and require special care. Even if you take all the right steps, planted in the wrong location this coffee won’t be exceptional. Planted in the right location, though, there’s nothing else on Earth like it. These coffees routinely fetch the highest price at green coffee auctions. In fact, demand is so high and supply is so low that a roastery is lucky to be able to bid on a bag at all! We managed to get our hands on one 50 lb bag that we’ll be roasting 2 lbs at a time in super-careful, teeny-tiny batches. During the months of November and December, there’ll be a very limited amount available to purchase in 8oz bags, and a small amount available on bar as a pour-over.
As a brewed cup, this Geisha from Hacienda la Esmeralda is enchanting, gentle, and refined. It has a delicate, tea-like body and notes of lavender, citrus, and honey that hit and then fade into each other like bells.
